HiWeiss Srl is an innovative start-up that has been involved in applied research since 2018 for the development, production, and marketing of new plant-based protein products, isolates, and concentrates, as well as derived products such as High Moisture Extrusion and Texturized Vegetable Protein.

Soy and peas are grown in Italy in a controlled supply chain, free from GMOs, from seed of selected genetics reproduced in Italy. The supply chain is based on the agronomic principles of regenerative and conservational agriculture. In the patented and protein-sparing extraction process, HiWeiss guarantees the complete utilization of by-products in the sense of a circular bioeconomy.”

HIWEISS PRODUCTS AND APPLICATIONS

HiWeiss produces plant-based proteins using two patented processes that stand out for their nutritional value and functionality – both biologically and technologically. The proteins are isolated and concentrated from non-GMO peas and soybeans, and are available in gel or powder form.

Their use in the food industry is extremely versatile, especially because HiWeiss’ extraction process is patented and unique.

In fact, HiWeiss is able to preserve the structural properties of the native protein throughout the entire production process. The extraction process is so gentle that even the extracted protein from organic soybeans and peas is eligible for organic certification. The quality of the protein is also guaranteed by avoiding the use of strong inorganic acids during the extraction process. The result is a protein of unparalleled value, also from a health perspective.

HiWeiss proteins not only have a high nutritional value but also serve as ingredients in food preparations for thickening, emulsifying, fat and water retention, as gelling agents, stabilizers, and flavor enhancers, thanks to their balanced amino acid profile.

HiWeiss proteins are textured wet and dry products with unique properties.

The by-products, the cornerstones of HiWeiss’ circular bioeconomy process, are whey, soy fiber, and pea starch.

MISSION
Our MISSION is to produce sustainable, high-quality plant protein isolates and concentrates, as well as their derivatives with technological functionality. We respect the environment, the farmer, and the end consumer equally. Our goal is to contribute to improving people’s well-being by offering a natural plant product that also enhances farmers’ sustainability efforts.
VISION
Our VISION is to contribute to making the farmer a key player in the supply chain and to involve them in a value-added process that properly values their work. The farmer actively participates in the process of transforming a 100% traceable raw material into quality products. Conserving, regenerative agriculture is an essential part, as it, like the entire industrial process, reflects a closed-loop economy. This not only leads to a significant reduction in emissions but also to the binding of environmentally relevant carbon dioxide, which is permanently returned to the soil and also flows into the circular economy of the HiWeiss system.
Conservation Agriculture
Since 2005, HiWeiss has been applying conservation agriculture techniques both in its own agricultural company, HiWeiss Agricola, and with its partners. These techniques are in line with the guidelines of the Veneto regions and the principles of the Food and Agriculture Organization of the United Nations (FAO).

The FAO coined the term conservation agriculture and is based on the following three principles:

1) Minimum soil disturbance, direct seeding on untilled land
2) Use of cover crops and management of crop residues
3) Crop rotation and diversification of crops

The goal is to increase soil fertility, reduce fuel consumption, and at the same time, contain production costs.
